On January 1st 2006 HACCP legislation was introduced into the UK. The law stated "It is a legal requirement for all food businesses to put in place procedures based on food safety management (HACCP) principles" FSA.
This means EVERYONE in the food industry except farmers. It also covers food manufacture, catering and retail. It is a legal requirement and will be enforced by your local authority.
Failure to do so could result in fines or closure of your business.
So, what do you have to do to be HACCP compliant?
- You must produce a document which looks closely at your business and describes what you do to ensure your food is safe (A HACCP Plan).
- You must keep the document up to date.
- You must train your staff to handle food hygienically, and understand HACCP.
- The person in charge or manager must have received adequate training to enable the HACCP principles to be managed.
The complexity of your documentation will vary according to the size of the business and what you do with food.
